Caviar Mold Recipe

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup water
  • Sour cream
  • 2 tbsp mayonnaise
  • 2 tablespoons of lemon juice
  • 2 tablespoons of grated onion
  • 1/4 tablespoon of sugar
  • 1 dash hot pepper sauce
  • 4 oz of caviar (lumpfish or white fish)
  • Salt & white pepper
  • Parsley sprigs
  • Toast rounds or unsalted crackers

    Instructions

    Sprinkle gelatin over water and let stand until softened. Warm 1 cup of sour cream, add gelatin while constantly stirring until gelatin melts. Remove from the heat and mix the mayonnaise, lemon juice, onion, sugar and hot pepper sauce, while blending it well. Rinse caviar carefully with cold water. Remove excess water. Reserving 1 tablespoon of caviar, add the remaining portion to the sour cream mixture, while stirring gently. Season with salt and white pepper. Prepare into greased 2-cup mold or into 8 to 10 small mold. Chill until firm. Unmold onto plate. Place 6 tablespoons of sour cream on top if you have prepared the large mold, or 1 tablespoon on each individual mold, if you have chosen to prepare the smaller molds. Place reserved caviar atop the sour cream. Surround with parsley, and serve with toast rounds.

    Yield: 10 servings
