Caviar Pie Recipe

Ingredients

  • 1 large white onion (minced)
  • 6 large hard-boiled eggs (chopped)
  • 3 Tablespoons of mayonnaise
  • 1 8 oz package cream cheese (softened)
  • 2 to 3 cups sour cream
  • 1 4 oz jar of caviar
  • Chives
  • Parsley
  • Melba toast

    Instructions

    Drain the chopped onion on a paper towel. Butter an 8-inch pan. Combine the eggs and mayonnaise in a bowel, and spread in the bottom of the pan in an evenly. Sprinkle with the chopped onion. Beat until the mix is smooth adding the cream cheese and sour cream. By spoonfuls drop onto onion. With a wet table knife spread to a smooth finish. Cover and chill 3 hours or overnight. Just before serving, drain the caviar jar and spread it over the cream cheese. Loosen form from pan. Garnish the top with chives and parsley. Surround the base with parsley sprigs. Serve with melba toast.

    Yield: 10 to 12 servings
