Caviar Spread Recipe
Ingredients
2 ounces Black Romanov caviar
3 scallions, finely chopped
2 bunches parsley, finely chopped
1/2 lemon
1 pint of small curd cottage cheese
1/2 cup light sour cream
3 hard-boiled eggs

Instructions
Chop the egg whites and the egg yolks separately. Mix the sour cream, egg whites and cottage cheese.
In a medium bowl layer: part of parsley, 1/2 of the cottage cheese mix, scallions, balance of cottage
cheese mixture. Place the egg yolk in the center, and surround it with a circle of caviar. Ring bowl
with the remaining parsley. Squeeze lemon juice on top and serve with crackers.
Yield: 8 servings
